//Healthy Kids Snack//

So Kyler went to a very fun and educational day camp at the ISU Extension in Sioux City  (highly recommend having your child check it out) this week and learned all about healthy choices.  Finding healthy snack options for the kids isn’t always an easy task but what he learned at the camp inspired him to come home and tell us all about it.  He brought home a few different recipes including a yogurt parfait and an “All Star Bites’ recipe that he wouldn’t stop talking about! After dinner he asked if we could please make them because he wanted to eat healthy snacks during the day.

IMG_0404.PNGLooking at the recipe, I realized we had all the ingredients (very simple recipe)!! So we gathered the below ingredients and within 10 minutes, had our bites made and in the freezer.

ALL STAR BITES:
1 C Rolled Oats (we used instant)
1/2 C Mini chocolate chips
1/2 C Peanut Butter
1/3 C Honey
1 tsp. Vanilla
--Add all ingredients in a bowl, stir until completely mixed.  Roll into balls.  Freeze for an hour. 
--Place 2 to a baggie
--Store in fridge
--ENJOY!!!

//Food Prep Sunday//

IMG_6352Sundays are my favorite day for many reasons– church, no work, staying home with the kiddos and FOOD PREP for the week ahead!  I’ve learned in my years of Beachbody that prepping is KEY!! I always thought it would take me forever to do but it honestly takes an hour or less to put everything together.

I usually order my groceries to pick up or be delivered on Friday after school so I always try to be prepared as to what I need by Thursday.  My weeks are pretty consistent as far as what I eat, especially during the school week.  Once I get my groceries, I store them until Sunday and get them out, cut them up and portion them out!! So nice to have to just grab and go!

Some of my go to breakfasts: oatmeal, egg white muffins, hard boiled eggs, fruit, healthy french toast, Greek yogurt with Fiber One cereal, and homemade Quest bars.

Some favorite snacks would be: Shakeology bars, fruit, almonds, bananas, crockpot apples, hummus and rice cakes.

Chocolate is by far my favorite!

As far as lunch it almost always consists of a chocolate shake and some kind of fruit. I make my shake with 1/2 water, 1/2 cashew milk, ice, scoop of Shakeology and 1/4 of a banana.  

Dinners can sometimes be tough because I’m also trying to cook for a 7 year old, 4 year old and 1 1/2 year old.  I try to make thing  all will eat but it doesn’t always happen!  Some of our go to’s are Mexican Crockpot Chicken (great for leftovers– tacos and salads), turkey meatballs, turkey meatloaf, shrimp and salmon.  Vegetables consist of sweet potatoes, zucchini noodles, spaghetti squash, mixed medley of cauliflower and broccoli and cauliflower rice.  Some pictures below of some of our favorites… I will post more recipes this week too! I don’t have tons of time like most moms so my recipes are quick and easy!!

IMG_6744And LASTLY– my favorite… DESSERT!! I found my newest love and posted it the other day!! HOMEMADE ICE CREAM!! It’s easy and so much cheaper than Halo Top and the other healthy ice creams.

//Ice Cream Lover?!?//

ice creamMONDAY MUST TRY!!! Not until I met my husband was I one that needed something sweet after dinner!!  I used to just have a yogurt or something sweet and healthy and then he started having ice cream– another down fall of mine!! I’d buy the Fat Free Blue Bunny or another ‘healthier’ option and as of recently I’ve been buying the Halo Top or Enlightened pints of ice cream.  Highly recommend by the way!! As much as I like having that after dinner, the price can get a little steep ($3.99-$4.50 each) so I have been looking for an alternative to an ice cream substance for my after dinner dessert.  In comes my newest find and am very excited about it– HOMEMADE CHOCOLATE PEANUT BUTTER ICE CREAM (or any other flavor you may enjoy)!!!

Chocolate Peanut Butter 5- Ingredient Ice Cream (2 Servings)

  • 4 bananas (will need to freeze)
  • 1/2 cup cocoa powder
  • Pinch of salt
  • 1/4- 1/2 cup Almond milk (or whatever milk you prefer)– I like Almond/Cashew Milk
  • 1-2 T almond butter or peanut butter of choice
  • Chocolate chips for topping (optional)

Peel, cut and freeze bananas.

Instructions: 

  1. Place frozen bananas, cocoa powder, almond/peanut butter, and almond/cashew milk into blender and blend until smooth.
  2. Pour into a freezer-safe container and freeze until solid.
  3. Scoop into bowls and top with chocolate chips (optional)

OTHER FLAVORS I’VE TRIED: 

Vanilla— take out the almond/peanut butter and add 1/2 tsp of vanilla extract instead.

Mint Chocolate Chip– take out the almond/peanut butter and add 1/4 tsp peppermint extract and include the chocolate chips listed as optional above (YUM!!)

Give it a shot!!! Easy, healthy AND tasty dessert!!

Some of my favorite flavors!

I have a new drink for ‘Try it Tuesday‘!! I’ve recently discovered Kombucha drinks and have liked every flavor I’ve tried— they are natural teas fermented to probiotic perfection with raw, fresh ingredients that provide nourishment for the mind, body and soul 🙂  I usually have one a day to mix up from my regular water intake.
